Fish Steaks In Beer
The Pacifica House Hawaii Cook Book

This vintage recipe for Fish Steaks in Beer comes straight from The Pacifica House Hawaii Cook Book (1965), a charming mid‑century collection that captures the island’s relaxed culinary spirit. It’s a simple yet flavorful dish that blends the hearty comfort of beer‑braised fish with the breezy tropical flair of Hawaiian home cooking. The combination of butter, lemon, and seasoned beer sauce creates a rich, golden glaze that feels both nostalgic and timeless—perfect for serving alongside rice or noodles while imagining the gentle rhythm of waves beyond your lanai.

Fish Steaks In Beer

Ingredients

  • 1½ lbs. boneless fish steaks

  • 2 cans beer

  • 1 onion

  • 1 lemon

  • 2 bay leaves

  • 2 tbs. butter

  • 2 tbs. flour

  • ½ tsp. paprika

  • ½ tsp. seasoned salt

  • ⅛ tsp. pepper

Instructions

Lay fish steaks in a heavy saucepan with a cover. Pour over beer, add onion, lemon cut in half, bay leaves, paprika, and seasoned salt. Bring to a boil and turn heat to low, cover, and simmer 5 minutes. Remove cover and simmer 5 minutes longer. Lift fish steaks out of broth and discard onion, lemon, and bay leaves. Blend the butter and flour into a smooth paste and add to broth, stirring constantly until sauce boils and thickens. Add pepper and fish steaks to sauce and simmer just long enough to reheat fish. Serve immediately with rice or noodles.
