🍂 Backstory: The Mahalo Harvest Hug

Legend has it that this cozy concoction was first stirred up by Auntie Nani, the unofficial “spirit whisperer” of the Mahalogiving table. Every year, she’d arrive with a mysterious jug wrapped in a scarf of cinnamon sticks and palm leaves, claiming it was “blessed by the trade winds and the orchard gods.”

The drink was her way of blending two worlds: the crisp apples and warm spices of her Maryland autumns with the creamy coconut and citrus of her island roots. One sip, and you’d feel like you were wrapped in a quilt made of aloha — sweet, spiced, and full of gratitude.

Now, it’s a Mahalogiving staple. Served in tiki mugs with cinnamon-stick stirrers, it’s the official toast of ETI RADIO’s fall broadcast — a hug in a glass for every listener near and far.

Ingredients:

  • 3 oz apple cider (chilled or warm)

  • 2 oz pineapple juice

  • 1 oz coconut cream

  • ½ oz fresh lime juice

  • Dash of cinnamon

  • Dash of nutmeg

  • Crushed ice (or serve warm for a cider-style twist)

Garnish:

  • Garnish: apple slice, cinnamon stick, and toasted coconut rim (see below)

Instructions:

  1. Rim your glass with toasted coconut flakes.
  2. In a shaker, combine apple cider, pineapple juice, coconut cream, lime juice, and spices.
  3. Shake with ice and strain into a tiki mug or festive glass.
  4. Garnish with an apple slice and cinnamon stick.

Optional: serve warm by gently heating the cider and pineapple juice before mixing.

🥥 How to Make a Toasted Coconut Rim

Ingredients

  • Sweetened shredded coconut (about ¼ cup)
  • Optional: pinch of cinnamon or nutmeg for extra fall flavor

Instructions

  1. Toast the Coconut:
    • Spread the shredded coconut evenly on a baking sheet.
    • Bake at 350°F (175°C) for 5–7 minutes, stirring halfway through, until golden brown.
    • Let it cool completely — it crisps up as it cools.
  2. Prepare the Rim:
    • Pour the toasted coconut onto a small plate.
    • On a separate plate, add a sticky liquid to help the coconut adhere. Good options:
      • Maple syrup (adds fall sweetness)
      • Honey
      • Lime juice (for a tangy contrast)
  3. Rim the Glass:
    • Dip the rim of your tiki mug or glass into the sticky liquid.
    • Immediately press or roll the rim into the toasted coconut until well coated.
  4. Let It Set:
    • Allow the rim to sit for a minute before pouring the drink to help it stick better.
