Roast Pork with a Polynesian Touch ETI RADIO Promo

Ingredients
- 2/3 cup tomato paste
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 8-1/2 ounces can pineapple
- 3 – 3-1/2 pounds of pork loin roast
- salt
Instructions:
For 6 servings, mix 2/3 cup tomato paste, 1/4 cup soy sauce and 2 tablespoons brown sugar in small saucepan. Drain 8 1/2‑ounce can pineapple; save juice. Add drained pineapple and 1/4 cup pineapple juice to tomato mixture. Heat just to boiling, stirring constantly.
Trim excess fat from meat. Place 3 to 3 1/2‑pound pork loin roast on rack in shallow pan. Sprinkle generously with seasoned salt. Brush 1/3 cup sauce over meat. Cover meat loosely with foil. Bake in slow oven (325° F.) 2 hours. Remove foil. Bake additional 30 minutes.
Add remaining pineapple juice to remaining sauce. Heat to serving temperature. Serve with roast.
