A hearty, island‑inspired pirate galley stew — creamy coconut, warm curry spices, bright lime, and tender veggies. Perfect for a tropical feast on Exotic Tiki Island.

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp yellow curry powder
  • 3 cups diced potatoes
  • 2 cups sliced carrots
  • 1 can (14 oz) full‑fat coconut milk
  • 2 cups vegetable broth
  • 1 cup chickpeas or diced tofu (optional)
  • 1 tsp sea salt
  • 1/2 tsp chili flakes (optional)
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions:

  1. Sauté aromatics: Heat coconut oil in a pot over medium heat. Add onion, garlic, and ginger; cook until fragrant.
  2. Bloom the spices: Stir in curry powder and cook for 1 minute to release its aroma.
  3. Add vegetables: Add potatoes and carrots, stirring to coat them in the curry base.
  4. Pour liquids: Add coconut milk and vegetable broth. Bring to a gentle simmer.
  5. Simmer: Cook 20–25 minutes until potatoes and carrots are tender.
  6. Add protein: Stir in chickpeas or tofu if using; simmer 5 more minutes.
  7. Finish: Add sea salt, chili flakes, and lime juice to brighten the stew.
  8. Serve: Ladle into bowls and garnish with fresh cilantro.
