- 1 tbsp coconut oil

2 tbsp yellow curry powder

3 cups diced potatoes

2 cups sliced carrots

1 can (14 oz) full‑fat coconut milk

2 cups vegetable broth

1 cup chickpeas or diced tofu (optional)

1 tsp sea salt

1/2 tsp chili flakes (optional)

1 lime, juiced

Fresh cilantro for garnish
Instructions:
- Sauté aromatics: Heat coconut oil in a pot over medium heat. Add onion, garlic, and ginger; cook until fragrant.
- Bloom the spices: Stir in curry powder and cook for 1 minute to release its aroma.
- Add vegetables: Add potatoes and carrots, stirring to coat them in the curry base.
- Pour liquids: Add coconut milk and vegetable broth. Bring to a gentle simmer.
- Simmer: Cook 20–25 minutes until potatoes and carrots are tender.
- Add protein: Stir in chickpeas or tofu if using; simmer 5 more minutes.
- Finish: Add sea salt, chili flakes, and lime juice to brighten the stew.
- Serve: Ladle into bowls and garnish with fresh cilantro.
