The Pineapple Dream is a beloved ETI RADIO favorite – a layered dessert that blends golden cake, juicy pineapple, creamy vanilla pudding, and whipped clouds of sweetness, all topped with a snowy sprinkle of coconut. It’s the kind of treat that feels like a hug from the islands, perfect for any moment you want to share a little island joy.

Pineapple Dream

Ingredients:

    • 1 pkg. yellow cake mix
    • 1 large can crushed pineapple
    • 2 small pkg. instant vanilla pudding
    • 3 cups milk
    • 1 container heavy cream
    • 2 Tbsp. confectioners sugar
    • 1 small pkg. flaked coconut
    • 1 tsp. vanilla

Instructions:

Prepare cake and bake in a 9 x 13-inch pan following the box directions.
Thicken pineapple with cornstarch and spread over top of cooled cake. Prepare the instant pudding using 3 cups milk and spread over the top of the cake. Beat heavy cream with confectioners sugar and vanilla until it peaks. Spread over the cake and top with flaked coconut.
